Heart-Healthy Breakfast Recipes for Stroke Awareness Month

May is Stroke Awareness Month, and to help you stay on the path of healthy living, we have three delicious recipes that will do you — and your heart — some good! They feature foods that can help with cholesterol, heart disease and more.

Avocado and Egg Breakfast Sandwich

This recipe is one you might eat for more meals than just breakfast! In moderation, eggs are known to improve good cholesterol and lower the risk of heart disease. Avocados provide a good source of healthy fats, fiber and antioxidants and lower the risk of cardiovascular disease. Enjoy the taste of the sandwich while it works to make your heart healthy!

Ingredients:

4 lettuce leaves

16 slices cucumber

1/2 ripe avocado, peeled, pitted and sliced

4 eggs

1/4 teaspoon pepper

1 tablespoon olive oil

1 tablespoon lime juice

Salt and pepper

4 whole-wheat English muffins, toasted

Blueberry Oatmeal Walnut Muffins

These muffins are full of blueberries to help reduce the risk of stroke due to high blood pressure. This superfood can improve risk factors for high blood pressure, type 2 diabetes and obesity and reduce the risk of heart attack.

Ingredients:

1/4 cup soft non-hydrogenated margarine

1/2 cup packed brown sugar

1 egg

2 egg whites

1 cup oat bran

1 cup large flake oatmeal

1/2 cup 1% milk

1 teaspoon vanilla extract

3/4 cup whole wheat flour

2 tablespoons ground walnuts

2 teaspoons baking powder

1/2 teaspoon baking soda

1 cup fresh or frozen blueberries

1/4 cup large flake oatmeal

2 tablespoons chopped toasted walnuts

2 tablespoons whole-wheat flour

2 tablespoons soft non-hydrogenated margarine

Cinnamon Oatmeal Pancakes

We can’t offer breakfast recipes without including pancakes! Instead of normal pancake batter, this recipe calls for oatmeal as the base. Oatmeal contains soluble fiber and can help protect the heart from damage caused by inflammation. Add these pancakes to your breakfast menu to keep your ticker healthy — and happy!

Ingredients:

2 cups rolled oats

2 1/2 cups buttermilk, divided

1/2 cup whole-wheat flour or oat flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon cinnamon

1/4 teaspoon salt

2 large eggs, whisked

1/4 cup canola oil

1 tablespoon honey or maple syrup

Canola oil cooking spray or extra canola oil for cooking
